Alot of it is due to the fact that if you were wealthy enough to escape Europe in the 1920s-1930s, and migrate to the US, then you were wealthy enough to start a small business. You also came from a poor country, where work wasn't a way of making money, but was a way to stay alive. So they had an incredible work ethic and skilled labor.
They also were also segregated into there own communities in the US, which meant they had to work together to survive.
