I'm 31 and living at my parents. I have about $800k in BTC and ETH that I can sell, and $300k in other assets.

If I sell I could buy a house cash and leave about $200k in the bank at 5% interest (this is all post-taxes). Work part-time if I want, or keep my job ($240k/y) and just be super comfy.

When is it time to cash in my chips and start living instead of frugal maxxing?

you're 31. Not old, but time to start planning your life. Take some time to do some deep reflection. As money isn't much of a barrier for you (1/4 mil/y damn) you should be thinking about how to actualize potential and what all this money and work is for, what you can build with it. Close family ties are great, and you should be working on how to secure your current and potentially future family for success. If you have friends or trusted acquaintances of similar high levels of success, you can likely get some advise from them. Think about things like LLC's, trust funds etc. Think about the kinds of people you want in your future, (marriage partner/kids/elders, and social/business circles) what values are important to you, and how to align yourself with those things long term.
Personally my thoughts would be to have a cheaper home outright to act as a safe haven, maybe even two in two separate countries for security, and positioning myself close enough to a decent urban area to stay involved with social circles of entrepreneurs, and other well off well educated people to keep abreast of the current environment, and start focusing on how to give back and get involved to enact the kind of positive change I want to see in my environment and to steer things in those directions, such as advocating for better people centric urban environments in the urban area I chose.

You're on the cusp of achieving what most people dream about, but you may be starting to plateau in some ways that would require a paradigm shift to push through. Good luck

I don't think my assets are nearly enough to have a house in multiple countries. Houses are like $600k here so I'd be buying a house cash and then have $2-300k left over. That could be about $12.5k/year in passive income, enough to cover my property taxes, insurance and car maintenance/fuel/ins.

Part of me says I should lock in this guarantee of being more or less "set for life", since I see the above scenario as being ahead of 99% of the population. I could keep working, or just work part-time, and have as much free time as I desire since my costs are super low.

The other part of me says I should hold out, I do think crypto is going much higher on a longer time frame. But it will be a volatile ride to get there. If things were to double it would set me up for sure to never have to work again. The problem with this perspective is that I might have the same mindset when things do double. Continuously chasing a higher number.

I've only got 250k in crypto atm, 17k in bank, 58k in retirement funds i can't touch until 60 and working part time making peanuts (30k est) and never made over 65k/year in my life at 29 so I know I can't give the best advise. I just know I'm starting to have to think about the bigger scale and picture. I'm going to try riding this bull run. My timing last run was pretty good, but didn't scale out hard enough, and went back in too early, so meh. I was thinking more so a SHTF scenario. Maybe find a cabin in the woods for cheap as a last resort kind of thing, 100k-300k. Just remember s&p500 average returns mean doubling every 7 ish years. don't buy a house cash unless its below 10% of your NW. rates are high atm, but you have a well paying job with low expenses so should be a super secure loan for the bank, and can always refinance down the line.
definitely start focusing more on securing assets for long term with your income and low expenses. unless your job is getting in the way of the other goals and priorities in life, hang around and keep stacking and networking for future potential.
as this run continues I'd start scaling out into less risky assets for security, but go ahead and keep 30-50% of your NW in crypto if you feel comfortable.
I'm by no means a financial advisor, but based on what I've read and what has been on my mind this is what I'm thinking about and trying to plan for with only 300k NW with +80% in crypto. if I hit the half milly I'm going to ask my well off parents for help with planning and maybe connecting to an advisor for help with my non-traditional senario
